Miranda in Long Room, City Tavern. In the City Tavern Cookbook, Staib explains: “The Tavern staff is dressed exactly as their counterparts were two centuries ago, as servants to the upper class. A colonial observer could tell the class of a servant by the material of his buttons, with wood buttons indicating the lowest strata, working up to bone and ivory buttons. City Tavern staff close their breeches with metal buttons, indicating that the original servants were placed somewhere in the middle of the servant class social ladder,” (Philadelphia: Running Press, 1999) 112.
